Gracie's Meatloaf


big plastic bowl for mixing
3# gd. chuck
dice one whole onion
1/2 cup mustard
cup ketchup
breadcrumbs added to "feel" as you knead with hands (approx. a whole can)
2 pieces white bread ripped small pieces to soak liquids
4-5 raw eggs
hand mix...about 1-2 minutes to homogenous

cake pan, with veggy oil to cover bottom
--------------------
form loaf...salt and pepper top ..loaf about 2-3" high
325-350 for 70-80 minutes
Cut thru middle and check for doneness

Gracie's top stove beef pot roast...5-6 folks

Coat (big) pot bottom slightly with veg. oil.
After coating beef sides (possibly 2 -2# roasts stacked) with flour-salt-pepper,
cover pot and sear (medium-325F) 4 lb.+   beef both sides...15 minutes.
(3/4 lb to one lb per person)---type beef= arm, chuck, round.
*Dump in 2 cans (Campbell's) beef broth/bullion, and enough water to cover meat.
Go 2 hours+ @ 325F...lifting/turning meat periodically. 
Add vegetables (I use-- tatoes skinned then quartered, chopped celery, chopped carrots)...and cook for another hour, to top of pot (& cover).
Then check tatoes and beef for softness.
*Can also sprinkle in a little minced garlic and whole onion (maybe 2) cut up,  during "beef- only" section.
